Fat free paneer (cottage cheese)

Fat free paneer recipes are for weight watchers like me 😉 … I love paneer so its difficult to avoid eating it, i have seen mom from my childhood preparing paneer from whole fat milk and she used to prepare my favorite paneer masala where she used to include butter and along with that whole fat paneer just think about the yummy taste 😀 😀 …Missing my mum’s dishes 🙁 🙁 … Eating this high fat content dish is not that good on regular basis and moreover will surely make me to put on weight so thought to try making paneer with fat free milk.Followed the usual method by boiling the milk and once boiled added lemon juice to get the paneer getting separated from the green water that is whey.Drained the paneer using colander and  the outcome of paneer was crumbled form and then covered the with muslin cloth.To make firm shape added weight on top of it the usual method 😉 .I just could not believe about the outcome of Fat free paneer ..texture was somewhat similar to whole fat paneer and i wanted to get it hard like store brought ones  :p :p so refrigerated for 30 mins. I was really happy to see the outcome 😉 😉 it had good texture 🙂 . And i made paneer masala with 1 tsp oil which was really healthy and low in fat so why not try it ??????

Ingredients
  1. Fat free milk- 10 cups
  2. Lemon juice-1/3 cup
  3. Cumin powder-2 tsp (optional)
Instructions
  1. Add the fat free milk to deep pan and switch the stove to high to bring milk to boil.Make sure to stir always or else milk may get burnt at the bottom forming black line to vessel
  2. Once milk boils switch the stove to medium and then add lemon juice ,if you don't like the flavor then use curd.
  3. Milk starts to curdle and stir it well.When you can see separation of curd from greenish water nicely as shown in the pic switch off the stove.
  4. The flavored part comes here add cumin powder to the liquid and give it stir ...this is totally optional but i like to add cumin powder in paneer to get extra flavor...
  5. Pour the content to colander which is covered with muslin cloth to drain the greenish liquid which is called as whey from curd.You can use whey in Roti dough which makes it so soft or preparing any kind of pasta recipes and as well i use them in preparing banana and choco shakes too.
  6. Let it sit for 10 mins as it will be hot .After 10 mins just squeeze out the water and add weight on top of the crumbled paneer for about 1 hr to make it firm.
  7. Remove the paneer from muslin cloth and cut the paneer into cubes.To make it more firm i refrigerate paneer for about 45-60 mins ;) .
Notes
  1. Always prepare paneer with fresh milk.
  2. Homemade paneer will be so soft and when you cut it sometimes you wont come up with perfect hard shaped cubes then no worries just put the paneer in refrigerator for 45-60 mins and then cut into cubes you will get perfect cubes which will help you in making perfect paneer tikka or paneer masala or any other paneer recipes.
