Eggless Muffin with banana and walnut are so moist and soft with rich banana flavor and this is perfect for snacks!!!Thought Muffins without egg does not gives soft texture but i was wrong until i tried this Muffins.Don’t feel like eating ripe bananas then go for Eggless Banana Walnut Muffin you will totally forget that this is the banana which you were avoiding to eat 😉
- Sugar-1/2 cup
- All purpose flour-3/4 cup
- Oil-1/4 cup
- Baking powder-1/2 tsp
1.Sieve the flour and baking powder in a bowl.
2.Mash the banana and sugar with fork well into semi liquid consistency.Add oil to mashed banana and combine it well with flour mixture such that there is no lumps.Add walnuts to batter and save few walnuts for later use.
3.Preheat oven to 375 F or 190 C .Pour 3/4 of the batter to baking cup as flour will raise while baking.
4.Sprinkle the remaining walnuts on top of the batter.Used 6 cup cakes and had remaining batter so poured to my all tym fav heartin shaped baking pan which is shown here.
4.Bake the muffin for about 25 mins and in 15 mins the muffins will raise and after 25 mins of baking color changes to slightly brown as shown here.
- Take out the muffin pan from oven and let it cool and then serve the Eggless Muffin.
- You can check the muffins are cooked by poking it with toothpick and if the tooth pick is clean then its cooked or else bake it for few mins till it gets cooked.
