Ragi chocolate mug cake (Vegan,Gluten-free)

Ragi chocolate mug cake is one of  the impressive dessert which is vegan, gluten free and healthier choice of eating mug cake 😉 , this is made of simple pantry ingredients and topped with healthy frosting is n’t it sounds interesting !!!! One of the similar character between me and my husband is CAKE and you know what we just cannot resist it from eating any kind of cake :p and my quick of preparing is this choco mug cake and Red velvet mug cake  but we always had guilt feeling of including all purpose flour/maida to our diet and most importantly cannot avoid eating cakes tooooo 😉 😉 so later on my husband asked me to prepare with Ragi flour and to my surprise the taste and texture was good 😀 and now my quick way of preparing healthy mug cake is Ragi chocolate mug cake <3 <3 <3  .

Mostly instead of using all purpose flour i started using coarse oats powder and if you want to impress this dessert to the guest with frosting just make vegan frosting (no butter) using 12 oz of vegan semi sweet choco chips, 1 can of organic coconut lite milk, coconut oil ,will post this healthy no butter frosting soon !!!! This Ragi chocolate mug cake tastes good without frosting TOO trust me 🙂

The best way to find out correct cook time for choco cake in microwave is first microwave it for 30 secs and then check the texture.Again microwave for about another 30 secs and then check the texture by poking the tooth pick inside the cake ..if it comes out clean then it is cooked perfectly or else repeat the same for another 30 secs.My microwave is 1000 watts and it took 1 min 30 secs for perfect mug cake and only important thing from your side is you should eat it as soon as your prepare or else cake will become hard as biscuits 😉

Serves : 1 Total time : 2 mins

Ingredients:

  • Ragi Flour/finger millet flour- 3 tsp
  • Baking powder- pinch
  • Coco powder- 1 tsp
  • Almond milk-3 tsp
  • Oil- 3 tsp
  • Brown Sugar-2 tsp (adjust more 1 tsp or reduce based on your choice)

  • Combine dry ingredients first by adding ragi flour,baking powder,coco powder,brown sugar.

  • Add wet ingredients almond milk , oil and combine well.

Ragi chocolate mug cake

  • Top it up with  healthy frosting (will post the recipe soon) by combining boiled hot oraganic coconut milk[12 0z] + vegan semi sweet choco chips[12 oz]+ coconut oil [2 tbsp] & freeze it once cooled overnight then use this as topping or just have it alone it will taste yum !!!

Note: 

  • Add walnuts or any nuts to enhance the taste of this mug cake.
