Chicken Biryani

Chicken Biryani is the most delicious and flavorful dish to everyone and for every special occasions in my home we prepare this aromatic and yum biryani !!For Biryani i always use basmati rice or long grain rice and serve with onion raita which is perfect combo.When biryani is cooked perfectly it just makes my day very happy 🙂

Tips to make grainy and tasty Chicken Biryani :

  • To get tasty Chicken Biryani just soak the marinated chicken overnight to get the perfect flavor
  • To get grainy rice my mom’s tip is to soak the basmati rice in water for 5 mins and then leave it in counter for 10 mins to dry.
  • Chicken and rice ratio mostly i prefer 1 kg chicken and 3 cups of basmati rice [ serves 5-6 person] , if chicken is more and rice is less or rice is more with less number of meat then biryani wont come out well .
  • For water ratio mostly i add 4 cups of water to 3 cups of basmati rice as already chicken gravy contains water.
  • Once you add rice and water to chicken gravy,taste the salt and spices or if you need more spice or salt add accordingly and let it cook for 10 mins.
  • Then cook with  medium flame for 20 mins and switch off the stove and dont disturb the biryani for 10 mins.After 10 mins you can serve this perfect grainy chicken biryani with onion raita.

Marinate for 2 hrs or overnight in refrigerator
  1. Chicken-1 kg
  2. Ginger garlic paste-2 tsp
  3. Salt-1 tsp
  4. Chilli powder-1 tsp
  5. Coriander powder-1 tsp
  6. Shan Biryani masala-2 tsp
  7. Mint-1/2 cup
  8. Coriander leaf-1/2 cup
  9. Yogurt-1 cup
Other ingredients
  1. Basmati rice - 3 cups
  2. Water-4 cups
  3. Oil-1/2 cup
  4. Ghee -1 tsp
  5. Bay leaf-2
  6. Star anise-2
  7. Cinnamon sticks-2
  8. Jeera-1 tsp
  9. Green chili-4
  10. Ginger garlic paste-2 tsp
  11. Onion-1
  12. Tomato-2
  13. Chili powder-1 and 1/2 tsp
  14. Coriander powder-1 and 1/ tsp
  15. Mint-1/4 cup
  16. Coriander leaf-1/4 cup
  17. Salt-1 tsp
Instructions
  1. Clean chicken with turmeric and water.
  2. Marinate chicken with ingredients mentioned above for 2 hours or overnight in refrigerator.
  3. Heat a pan with ghee and oil, once hot add bay leaf,cinnamon sticks,star anise,jeera.Saute for about a min.
  4. Add onion and cook with lid on till it changes to slight golden brown in color.
  5. Add ginger garlic paste and cook till raw flavor disappears.
  6. Add tomatoes and salt to make it mushy quickly.
  7. Once tomato becomes mushy add chili powder,coriander powder and saute until oil oozes out.
  8. Add mint and coriander leaf.Saute for a min.
  9. Add marinated chicken and cook with lid on for 20 mins or until chicken gets cooked perfectly.
  10. Soak Basmati rice in water for 10 mins and drain the rice.Let the rice dry in counter for 10 mins.
  11. Once chicken gets cooked add the basmati rice and water.Now taste the gravy ,if salt and spices are not enough add more salt or spices and cook for another 10 mins or else directly cook with lid on for 20 mins on medium flame.
  12. After 20 mins switch off the stove and leave the biryani undisturbed for 10 mins.
  13. After 10 mins serve this chicken biryani with onion raita and chicken fry
