Vegetable Biryani | Hyderabadi Veg dum biryani

Vegetable Biryani is one of the most popular and flavorful recipe of India which is prepared with rice,vegetables ,Indian spice mixture to make it more aromatic and tasty!!! I love to eat this biryani with peanut/groundnut chutney which is my all time favorite 😉 and also you can serve it with onion raita or cucumber raita or baigan ka salan As my mom and bro have become vegetarians their sunday recipe would be this Vegetable Biryani or Mushroom briyani  . Vegetable Briyani




Ingredients:

  • Oil-1 tbsp
  • Jeera-1 and 1/2 tsp
  • Bay leaf-1
  • Cloves-2
  • Black cardamom-1
  • Star anise-2
  • Cinnamon sticks-2
  • Onion medium-1
  • Tomato medium-1
  • Pudina/Mint leaf- 1/2 bunch
  • Coriander leaf/cilantro-1/2 bunch
  • Potato -1 cup
  • Peas-1/2 cup
  • Cauliflower-1/2 cup
  • Beans-1/2 cup
  • Carrot -1 cup
  • Yogurt/Curd-1 cup (thick)
  • Turmeric powder-1 tsp
  • Ginger garlic paste-2 tsp
  • Chili powder-1 tsp
  • Coriander powder– 1 and 1/2 tsp
  • Garam masala powder-1 tsp
  • Salt- to taste
  • Saffron-4 strings
  • Lemon juice- 1 tsp
  • Bread croutons- 1/2 cup (optional)

Cooking basmati rice for dum biryani:

  • Basmati rice-1 cup
  • Water-1 cup
  • Pudina/mint leaf – 2 tsp
  • Cilantro/coriander leaf-2 tsp
  • Bay  leaf-1
  • Cloves-2
  • Green cardamom-2
  • Cinnamon sticks-1
  • Star anise-2
  • Oil-1 tsp
  • Salt-1 tsp

Vegetable Briyani




Vegetable Biryani recipe:

  • Clean and rinse all the vegetables well and chop into big chunks so that it does not get mushy at the end of briyani.
  • Heat a non stick deep pan/kadai with oil and once hot add jeera,cinnamon sticks,black cardamom,bay leaf,star anise and stir well.
  • Add chopped onion and salt and saute till onion becomes translucent.

  • Add ginger garlic paste and saute for about 2-3 mins until raw flavor disappears.Add chopped tomato,turmeric powder and saute till tomato becomes mushy.

  • Add all the vegetables and 1/4 cup  of water. Cook with the lid on for about 5 mins.

  • Beat the yogurt well in bowl and then add to the vegetables.Then add mint leaf,coriander leaf,chili powder,garam masala,coriander powder and combine well.Cook with lid on for about 15 mins and the gravy must be little thick and not too watery.

  • Meanwhile prepare rice for dum by boiling all the ingredients under Cooking basmati rice for dum briyani. Cook the rice till 80 % done and drain it.Just pour cool water  without breaking the rice once with normal water to prevent it from further cooking.

  • Heat Iron pan for preparing dum and in meanwhile arrange the vegetable gravy to the bottom of non stick deep pan , then half cooked basmati rice and then gravy and then rice.Now top it up with mint leaf,coriander leaf,saffron water ,lemon juice.Cover the deep pan with aluminium foil and then add lid (this is done to make sure no air gets out from vessel).Now place this non stick biryani pan to the iron pan and then just add little water to the iron pan to prevent the rice getting burnt at the bottom.Cook Vegetable Biryani for about 30 mins in medium flame.

Vegetable dum briyani

  • Open the lid and you can add the fried bread pieces (optional) to biryani( fry the bread pieces in oil or bake the bread pieces in oven at 375 F for about 15 mins to get crunchy flavor)
