Brinjal sambar (Egg plant lentil soup)

Brinjal sambar is instant sambar recipe which is prepared along with ghee dosa or idly.This delicious recipe is very easy and takes only 15 mins to prepare for morning breakfast or dinner.Eating hot Brinjal sambar with idly or dosa tastes so good where the brinjal gets smashed up with spices ,onion and tomatoes to bring wonderful flavor.

Ingredients
  1. Brinjal-6
  2. Moong dal-1/2 cup
  3. Onion-1
  4. Tomato-2
  5. Green chilli-4
  6. Garlic-3 (optional)
  7. Salt- to taste
  8. Sambar- 2 tsp
  9. Turmeric powder-pinch
Temper
  1. Oil- 1 tbsp
  2. Urad dal-1 tsp
  3. Jeera-2 tsp
  4. Curry leaf-4
Instructions
  1. Wash and rinse moong dal properly.
  2. Wash and chop the brinjal into small cubes and soak in water or else it will turn into black color.Chop onion,tomatos,green chilli,garlic into small pieces.
  3. Add moong dal,chopped onion,tomato, garlic,green chilli,brinjal,salt,turmeric,water,sambar powder in pressure cooker.
  4. Pressure cook for about 3 whistles.Once it cools down release the pressure by removing the whistle.
  5. Heat pan and add the items under "Temper".Saute for about 2 mins and pour the tempered items to brinjal sambar
Notes
  1. Always its good to consume sambar within one day and not store it for more than a day as we are using dal.
  2. Always soak brinjal/potato in water after chopping or else it will turn into black color.
