Gobi Paratha | Cauliflower Paratha

Gobi Paratha dish is basically Indian flat bread where grated cauliflower is stuffed and when it is topped with butter it tastes sooo delicious :).I usually make it for breakfast and your tummy gets full with two parathas as it has thick layers of cooked dough. Now days i started eating dry parathas since i am dieting 🙁 🙂 …But once in a while we can cheat our self by using butter to cook parathas. During my childhood mom used to top the butter on hot parathas and it would be mouthwatering 😀


  • Wheat flour – 2 cup
  • Water – 1 and 3/4 cup
  • Oil- 1 tsp/Ghee – 2 tsp
  • Grated Cauliflower- 1 cup
  • Jeera- 1 tsp
  • Chat masala- 1 tsp
  • Chilli powder – 2 tsp
  • Coriander powder- 2 tsp
  • Garam masala- 1/2 tsp

Paratha side dish:

  • Cumin powder – 1 tsp
  • Chat masala – 1 tsp
  • Chilli powder – 2 tsp
  • Pepper powder – 1 tsp
  • Curd – 1/2 cup



  • Blanch the cauliflower for 2 min and strain using colander.Grate the cauliflower and avoid the stem part.Consume the stem part by  just adding pepper and salt  as its is already boiled.

  • Prepare the dough by adding oil and cover the dough for 15 mins

  • Use tissue to remove moisture from grated cauliflower.
  • Heat pan with 1 tsp oil and add jeera/cumin seeds, chat masala,corinader powder,chilli powder,grated cauliflower & salt.Add salt carefully as chat masala contains black salt.Fry till cauliflower becomes dry it shouldnot be watery as it will be difficult to roll the paratha.

  • Stuff cauliflower in center  of dough and close all the sides.Now roll the paratha as shown in picture.

  • Make sure not to roll it thin cauliflower may smudge out.

  • Heat pan or tawa by adding 2 tsp ghee or oil .Put stuffed roti in tawa and spread oil all over it and cook for two mins and then  you will be able to see  brown patches on top of paratha when you flip it over.Then cook other side for 2 mins.

Serving Suggestions:

* Serve Gobi Paratha with curd mixed with  jeera/cumin powder,chat masala,chilli powder,pepper powder.I dont add salt as chat masala already has black salt. Be careful while adding masala as too much will spoil the taste.

* Serve Gobi Paratha with mango pickle
