Healthy Beetroot Pancakes

Beetroot pancakes is healthy+delicious and fluffy which can be easily prepared at home with just easy pantry ingredients eggs,beetroot,dates,wheat flour,milk.This pretty pink will just attract the kids to the core and seriously no one can resist with just having one 😀 and also perfect for valentine’s day recipe!! These pancakes are soooo soft and fluffy and the natural pink color just melts your heart and importantly this recipe contains no all purpose flour instead the whole wheat flour and no added sugar instead the homemade dates paste.You can prepare by soaking dates overnight in water and then grinding to fine paste or if you don’t have time then soak in hot water for about 10 mins before grinding.

The secret in making these pancakes is fluffy is leaving the batter for rest for about 15-30 mins and cooking in low flame to get perfect pink color which just makes your heart happy 😀 Am just waiting to have bite of these pancakes now !!!!!! Beetroot Pancakes

Ingredients:

  • Eggs-3
  • Beetroot-1 medium 
  • Wheat flour-2 cups
  • Milk-1 cup
  • Baking powder-2 tsp
  • Dates-15 to 20 (based on your sweetness)
  • Coconut oil-as required to cook pancake

Beetroot Pancakes recipe :

  • Add raw chopped beetroot and 1/2 cup of milk in food processor and blend to form 2 cups of puree.

  • Add eggs and 1/2 cup of milk to bowl and using beater whisk it for about a min.

  • To prepare dates paste- add hot water to the dates such that dates gets soaked well with hot water for about 10 mins and then grind in food processor to form fine paste.
  • Add beetroot puree,dates paste,baking powder, Sieved wheat flour to the above mixture.

  • Whisk until well combined and let it rest for about 30 mins or if you are in hurry use the batter without resting.

  • Heat greased pan with oil and once hot pour the batter using ladle & make sure to switch the flame to medium or else you may not get brown color rather than pink color 😉

  • When you see the bubbles on the batter flip the other side and let it cook completely.

  • Serve Beetroot Pancakes hot by pouring honey on top or whipped cream + berries :D.Seriously you cannot stop with having just one !!

Notes
  1. Make sure the batter is not in running consistency, it should be thick consistency as shown.
  2. Sieve the flour for better result.
  3. Leave the batter for at least 15 mins before cooking the pancakes.
