White Pongal is prepared on Pongal festival which is called as Ven pongal in tamil and making at home with relatives surrounded stays memorable everytime. My mom used to wake us early by 4.00 a.m and asks us to take bath and be ready for pooja within 5 .oo a.m and meanwhile she prepares White Pongal ,Sweet Pongal and Veg kurma. Still thinking how she managed to preapre all the dishes quickly …..And when we go to my granny’s place she used to make White Pongal in earthen pot/matki which tastes more than cooking in vessel…am missing those days now 🙁 .This is very rich dish as it is made of only milk 😀 and veg kurma will be good side dish for this.
- Milk – 5 cup
- Basmati rice – 1 cup
- Salt – 1 tbsp
- Cashews – as required
- Ghee – 2 tbsp
- Soak basmati rice for 30 mins
- Boil 4 cups of milk in kadai and meanwhile fry the cashews with 1 tbsp ghee
- Once the milk boils add rice ,salt and stir it well so that rice doesnot stick at bottom and let it cook for 10 mins.
- Add remaining 1 cup of milk and keep on stirring.Milk gets dry and rice should be in this consistency as shown.Add ghee and garnish with fried cashews.
Serve white pongal with veg kurma or karuvattu kuzhambu 😀
