Medhu Vadai | Ulundu Vadai

Medhu Vadai is my family’s favorite snack and preparing on a rainy day with chutney and hot tea is just perfect snack!! This Medhu Vadai recipe has simple ingredients but need to be very careful while grinding the urad dal as the batter should be thick and fluffy and not watery.Soak the urad dal in refrigerator for 3 hrs then grind ginger and green chili,soaked urad dal by adding 2 tsp of water to grind for 1 min then again add 2 tsp of water to grind for a min, repeat the same until you get thick and fluffy batter then add salt at the end.If batter is watery you wont be able to shape the vadai so add rice flour to make it thick.Mostly i serve this Methu Vadai by soaking the vadai in mango sambar for half an hr and then eNjoy so that all the sambar flavor gets into vadai 😀 .

Medhu Vadai Recipe :

Yields:25 Total time: 30 mins

Ingredients:

Urad dal-1 cup
Chopped Ginger-2 tsp
Green Chili-3 or 2 (based on spice level)
Chopped onion-1/4 cup
Coriander leaf-1/4 cup
Salt-to taste
Rice flour-2 tsp (if batter is watery include rice flour)
Grated carrot-1/4 cup (optional)
Ice water-required for grinding
Grapeseed oil- as required for cooking vadai

Recipe:

Soak Urad dal in refrigerator for 3 hrs
Take mixie grinder and add ginger,green chili to grind
Then add soaked urad dal and grind for a min.
Add ice water little by little to grind into fluffy and thick batter. I roughly used 6 tsp of ice water.
Add salt to it.As salt leaves water make sure batter is very thick.
Heat oil in kadai or wok ,once hot .Wet the hand in water and make small ball from the batter with hole at center and drop it in oil.
Then again wet the hand in water so that batter does not stick to the hand while dropping vadai in oil.Repeat the same for remaining batter.

Serving Suggestions:

Soak the vadai in mango sambar for half an hr and then serve and njoy !
Serve the vadai with coconut chutney and hot tea

Notes:

Use ice water while grinding. Added water using spoon so that you will have control of adding little water.
Use urad dal without skin.
Adding salt also leaves water to the batter so be careful.If batter is watery just add 2 tsp of rice flour to make it thick.
The batter consistency should be thick and fluffy
You can use grated coconut ,grated carrot to enhance the vadai flavor
