Broccoli Paratha (Healthy)

Broccoli Paratha is easy Indian Stuffed parathas with spiced broccoli and tastes yum to the people who don’t like broccoli as this will be grated and spiced up to give a hot delicious flavor of parathas. Serving hot hot broccoli parathas with spiced up yogurt or pickle would be perfect but I found it tasty without any side dish if eaten hot 😉 😉 In my family they don’t love eating broccoli chunks so mostly I try to grate it and then use in my recipes or saute very well with meat 😉 .

Broccoli Paratha (Healthy Lunch recipe)

Ingredients
  1. Broccoli-2 medium sized bunch
  2. Salt- to taste
  3. Butter/Oil- as required
  4. Red chili powder-3 tsp (adjust based on your spice level)
  5. ajwain seeds-1/2 tsp
  6. Cumin powder-2 tsp
  7. Coriander powder-1 and 1/2 tsp
  8. Chat masala powder-1 tsp (optional)
  9. Green chili -2
  10. onion-1
  11. turmeric powder-1 tsp
  12. Ginger garlic paste-2 tsp
Instructions
  1. Add 1 tsp red chili powder, 1/2 tsp ajwain seeds, salt to wheat flour. Kneed wheat flour to soft dough by adding little by little water.Cover the dough for about 10 mins.
  2. Cut the broccoli into florets.Wash and rinse it well with water.Add florets,green chili,cumin seeds/cumin powder to food processor/mixie and grind it well .You can also use grater instead of food processor.
  3. Add 2 tsp of oil to the pan and once hot add chopped onion,salt.Saute till onion gets cooked well and then add ginger garlic paste.Let it cook till raw flavor disappears for about 3-4 mins.
  4. Add grated broccoli,turmeric powder, 2 tsp red chili powder,1 tsp chat masala, 1 and 1/2 tsp coriander powder.Combine everything and cook with lid on for about 8-10 mins and stir in between.Switch off the stove and let the filling cool.
  5. Heat Flat pan in medium flame and meanwhile prepare parathas by taking a medium piece of dough and make thick circle shape as we are making parathas for Roti/Indian flat bread we usually roll it flat 🙂 .Place small ball of broccoli filling at the center of flat.
  6. Cover the filling as shown and make sure it is sealed properly.
  7. Start rolling softly by dusting to flour on both sides and make sure filling does not come outside.
  8. Once pan/tawa gets hot add 1 tsp oil and then stuffed paratha. Once it cooks on one side with brown dots flip it over to other side by spreading oil and cook it completely on both sides.Make sure you coat with oil on both sides to get perfect soft Broccoli Paratha.
Notes
  1. Serve it with spiced curd mixed with jeera/cumin powder,chat masala,chilli powder,pepper powder.I don't add salt as chat masala already has black salt. Be careful while adding masala as too much will spoil the taste.
  2. Serve it with your favorite pickle.
  3. Adding butter to parathas makes more tasty but if you are calorie conscious then just use required olive oil.
