Ennai kathirikai kulambu (Fried Egg plant/brinjal curry)

Ennai kathirikai kulambu is soo delicious and tasty which is prepared with spicy and tangy liquid and the highlight is first brinjal is fried with oil and then cooked with the spices and tamarind juice. Ingredients
  1. Brinjal-7
  2. Onion-1
  3. Tomato-1
  4. Cumin/jeera-1 tsp
  5. Ginger garlic paste-2 tsp
  6. Shredded coconut-2 tbsp
  7. Salt-to taste
  8. Chilli powder-2 tsp
  9. Coriander powder-2 tsp
  10. Turmeric powder-1 tsp
  11. Sesame Oil-2 tbsp
  12. Urad dal-1 tsp
  13. Fenugreek seeds-4
  14. Red chilli-2
  15. Hing-pinch
  16. Tamarind -lemon size
Instructions
  1. Wash and Cut brinjals with one end of the brinjal and leaving intact as shown in detailed recipe with pictures.
  2. Heat pan with oil and once hot add the brinjal and saute for 10 mins and keep it aside.
  3. Heat pan with oil ,once hot add jeera,onion and salt.Saute till onion becomes translucent and then add the ginger garlic paste
  4. Once raw flavor of ginger garlic disappears add tomato and turmeric.Cook till tomato becomes soft and mushy.
  5. Add chilli powder,coriander powder,chopped coconut and saute them well by adding little water so that masala doesnot get burnt.Switch off the stove and grind to fine paste.
  6. Heat kadai with oil and add urad dal,red chilli,hing and add the fine masala paste and brinjal.Cook for 10 mins with lid on.
  7. Add tamarind juice to brinjal curry (If you want to be more watery add water as required.) and cook for another 10 mins with lid on.
  8. Switch off the stove and serve it with rice and pour ghee on top of it.This will taste awesome and tasty.

  • Wash and Cut brinjals with one end of the brinjal and leaving intact as shown.

  • Heat pan with oil and once hot add the brinjal and saute for 10 mins and keep it aside.
