Mushroom fried rice-Restaurant style

Mushroom fried rice is comforting food which is prepared with left over rice,soya sauce,mushroom and other vegges,pepper,hot sauce and salt.I just love this rice as it just takes 20 mins to prepare and very easy to prepare for lunch box too.If you have left over rice this Mushroom fried rice recipe is perfect choice.The trick to get tasty and delicious fired rice like the restaurant one’s is never add hot rice to mushroom mixture always use left over rice or cooled rice coated with oil, this makes the rice to be grainy and adds extra taste to the Mushroom fried rice.

I always love this fried rice as i can eat all vegetables only in this form :p :p and its really very difficult for my husband to eat broccoli alone so always i prepare this Mushroom fried rice and Broccoli Paratha for his lunch box.Literally my mom used to tell broccoli is very good for health but it was difficult to include in the diet as both of us don’t like the texture of broccoli but after this mushroom  fried rice and broccoli paratha it really changed my mind 😀 😀 so at least i make sure to include 1 cup of broccoli once in week.

Mushroom fried rice

Serves : 3 Total time: 20 mins

Ingredients:

  • Cooked rice – 2 and 1/2 cups
  • Soya sauce-2 tsp
  • Crushed Pepper-2 tsp
  • Ginger chopped-2 tsp
  • Garlic chopped-6 cloves
  • Hot sauce-1 tsp
  • Salt- to taste
  • Broccoli chopped-1/2 cup
  • Carrot chopped-1/2 cup
  • Frozen Corn-1/4 cup
  • Spring onion-2
  • Coconut oil-1 tbsp
  • Olive oil-1 tbsp

Marination:

  • Mushroom-20
  • Salt- to taste
  • Corn flour-2 tsp
  • Red chili powder-1 tsp
  • Soya Sauce-2 tsp
  • Pepper crushed-1 tsp

Mushroom fried rice

Mushroom fried rice recipe:

  • If you have left over rice add oil and crumble it well so that oil gets coated in each rice grain or if you are going to prepare fresh rice then pressure cook the rice grainy by 1 :2 ratio of rice and water then let it cool by spreading the rice in wide plate.Once cooled add around 2 tsp of oil to the rice and coat well.

  • Clean mushroom with turmeric and water.Marinate cleaned mushroom with corn flour,soya sauce,red chili powder,crushed pepper,salt for about 10 mins.

  • Heat olive oil in wide pan and once hot add spring onion (white part) , garlic, ginger and saute for about a min by adding required salt.Add chopped broccoli,carrot and sprinkle little water.Cook with lid on for about 5 mins.

  • Now make space for mushroom and then add 1 tbsp coconut oil.Add the marinated mushroom and frozen corn.Cook with lid on for about 10 mins.

  • Open the lid you will find water formed on the mushroom mixture just let it dry 80%.Then add the oil coated cooked rice and combine everything well.

  • Add hot sauce, soya sauce, crushed pepper and combine everything well.Cook for about 2 mins in medium flame or else rice will stick to the bottom.

  • Serve this tasty Mushroom Fried rice by garnishing spring onion leaves.

Note:

  • Always add room temperature rice coated with oil to the mushroom mixture or else if you add hot rice it may break and not grainy.
  • Be careful by adding salt as soya already contains salt in it.
  • Marination of mushroom enhances the flavor so don’t skip 😉
  • You can use sesame oil too for its flavor
