Palak Paneer (Spinach Cottage cheese)

Palak Paneer is the most famous Indian dish which would be loved by all.This would be perfect dish for pregnant women as it contains iron and boosts the immune system.This is prepared by adding masala powder to the spinach and homemade paneer and dont add too much of masala as it will spoil the taste of spinach.

Ingredients
  1. Spinach/palak-3 Cups
  2. Green chilli-2 (optional)
  3. Cumin Seeds-2 tsp
  4. Onion-1
  5. Tomato-1
  6. Turmeric powder-pinch
  7. Chilly powder-3 tsp
  8. Coriander powder-2 tsp
  9. Garam masala- 1 tsp
  10. Paneer- 250 gm
  11. Salt- to taste
  12. Oil-2 tbsp
  13. Ginger&Garlic- chopped in equal amount
  14. Curd/cream/cashew paste-1 tbsp
Instructions
  1. Wash and rinse the spinach well to remove any dirt.
  2. Add water and let it boil.Add spinach and let it cook for about 2 mins with lid on.
  3. Drain the spinach using colander and consume this hot liquid as soup by adding pepper and salt or you can use this in roti/chapati dough .
  4. Let the spinach cool and heat pan with oil and once hot add chopped ginger and garlic then saute for 1 min.
  5. Add cumin, onion,ginger, garlic,salt then saute well until onion becomes translucent.Add tomato and cook till it becomes soft.
  6. Switch off the stove and let it cool. Once cooled grind add cooked spinach and the cooked onion tomato mixture to fine paste by adding little water.Avoid green chilli if you don't want to add more spiciness.
  7. Heat pan with 2 tsp oil and then add garam masala,chilli powder,coriander powder and add spinach paste quickly or else masala may get burn.Then add 1 tbsp cream or curd or cashew paste.
  8. Stir well and Cook for about 10 mins with lid on.Add the paneer to the palak mixture or shallow fry paneer separately by spraying little oil to the pan for 2 mins and then add to the palak mixture.
  9. Cook for a min and then switch off the stove. Palak Paneer is ready !
Notes
  1. Serve Palak Paneer with chapati or with pulao
  2. Don't overcook the spinach you will loose its color. Dont waste the water used for boiling the spinach consume it as hot soup by adding pepper and salt
