Onion Chutney | Vengayam Chutney

Onion chutney is perfect South Indian traditional side dish for dosa or idly , adai. This is quick and simple chutney recipe and the secret in making yummy chutney is adding more oil 😉 and cooking the onions in medium flame till it changes its color to slight brown and then grinding to fine paste.

Ingredients
  1. Onion-2 big
  2. Salt - to taste
  3. Oil-1 tbsp
  4. Red chili-5-6 (adjust based on spiciness)
  5. Tamarind - 1 inch
Tempering
  1. Oil- 2 tsp
  2. Mustard seeds-1 tsp
  3. Curry leaf-4
  4. Urad dal-1-2 tsp
  5. Hing/Asafoetida- pinch
Instructions
  1. Heat oil in deep pan and once hot add the chopped onions,salt,red chili and tamarind.
  2. Cook with lid on till onion changes its color to slight brown as shown below .And then grind to fine paste by adding little water in food processor or mixie jar.
  3. Temper the items by heating oil in pan,once hot add urad dal and let it change to slight golden brown in color,then add hing,mustard seeds,curry leaf and let mustard seeds splutter.Switch off the stove and pour to the Onion Chutney.
Notes
  1. Serve this Onion Chutney with idly or dosa or adai .
  2. You can avoid tempering or adding more oil too if you are calorie conscious,it tastes good :)
  3. Adding more oil increases taste of the chutney ;)
