Potato poriyal | Potato Roast

Potato poriyal or potato roast is simple South Indian recipe where potato is boiled and roasted with spice powder which goes well with sambar rice or curd rice.Cooking potato along with rice in same pressure cooker saves time especially for the office goers this would be best method or you can microwave 2 potatoes for about 10 mins.

Ingredients
  1. Oil - 4 tsp
  2. Boiled Potato-2 large
  3. Onion-1
  4. Mustard seeds-1 tsp
  5. Urad dal- 1 tsp
  6. Hing/asafoetida- pinch
  7. Curry leaf-4
  8. Coriander leaf-garnish
  9. Salt-to taste
  10. Chili powder-3 tsp or 2 tsp (based on spicyness)
  11. Turmeric powder-1 tsp
  12. Sambar powder-1 tsp (optional)
Instructions
  1. Boil the potato using pressure cooker for about 2 whistles or cook using microwave by clicking on potato option(it will automatically set the time and cook in microwave) or if you dont have option cook in microwave for about 8-10 mins.Once it cools down peel the skin off from the potato.
  2. Heat pan with oil and once hot add urad dal .Cook till it slightly changes its color.Add mustard seeds after it splutters add curry leaf,hing,onion and salt.Saute for about 2 mins until onion gets cooked well.
  3. Add the boiled potato ,turmeric and mix it well in medium flame with lid on for about 10 mins (make sure not to burn)
  4. After 10 mins a layer will be formed in the outer layer of potato and then add chili powder,sambar powder(optional).Saute for about 2-3 mins.Garnish with coriander leaf.
  5. Serve this Potato poriyal with sambar rice or curd rice !
Notes
  1. Cook the potato in slow medium flame which makes yummy coating all over the potato
