Kadai Mushroom gravy

Kadai Mushroom is quick recipe where mushroom is sauteed with onion , spiced and tangy tomato puree along with capsicum and dry methi leaf which gives wonderful flavor to this recipe and goes well with chapathi/Indian flat bread or jeera/cumin rice . You can also make it rich by using cream or cashew paste to this gravy.

Ingredients
  1. Mushroom - 8-10
  2. Tomato-2
  3. Onion-1
  4. Capsicum/bell pepper-1
  5. Ginger-1/2 inch
  6. Garlic-4 cloves
  7. Turmeric powder-1 tsp
  8. Chili powder-1 tsp or red chili- 2 or 3
  9. Coriander seeds-2 tsp
  10. Clove-2
  11. Green cardamom-1
  12. Cinnamon sticks-2
  13. Dry Methi leaf-2 tsp
  14. Salt- to taste
  15. Jeera/Cumin-1 tsp
  16. Pepper-5
  17. Poppy seeds-1 tsp (optional)
  18. Oil-2 tbsp
  19. Coriander leaf/cilantro-2 tsp
Instructions
  1. Dry roast coriander seeds,green cardamom,clove,cinnamon sticks,jeera,pepper,poppy seeds for 3-4 mins in medium flame.
  2. Once cooled grind to coarse powder in mixie or food processor.
  3. Rinse mushroom with water twice and then add pinch of turmeric powder then wash it with water.Chop mushroom into small pieces.
  4. Add 1 tsp oil in pan and add chopped mushroom.Saute till water oozes out from mushroom and then keep aside.
  5. Heat deep pan with 1 tsp oil and add chopped capsicum.Saute for 2-3 mins and keep aside.
  6. Add 1 tbsp oil in pan ,chopped onion and salt.Saute till it becomes translucent.
  7. Grind tomato ,ginger, garlic into fine paste. Now add this paste and turmeric powder.Cook with lid on until raw flavor disappears for about 4-5 mins.
  8. Add capsicum , grinded coarse powder and 1/2 cup of water (add as required).Cook with lid on until oil oozes out from the gravy.
  9. Add mushroom & dry methi leaf .Saute for about 3-4 mins and switch off the stove.Garnish with cilantro/coriander leaf.

  1. Serve Kadai Mushroom with Roti/Phulka/Flatbread or Jeera rice

  • Add capsicum , grinded coarse powder and 1/2 cup of water (add as required) + mushroom stock which we drained before.Cook with lid on until oil oozes out from the gravy.

Note:

  • You can also grind cashew with tomato,ginger and garlic to fine paste which makes gravy rich or you can add cream before switching off the stove.
