Tomato Thokku | Thakkali thokku

Tomato Thokku is one of the tastiest homemade pickle which is prepared with 4 main ingredients as tomatoes,fenugreek seeds,red chili,tamarind,Sesame oil.During tomato season my mum prepares this in huge quantity and serves us with dosa/roti or rice with sesame oil on top of it !!!!! Preparing this thokku is pretty easy in home and anything which is prepared fresh in home always tastes good πŸ˜€ .

Ingredients
  1. Tomato-8 large
  2. Salt- to taste
  3. Sesame oil - 1/4 cup
  4. Red Chili-8 or less based on spiciness
  5. Tamarind paste- 2 tsp
  6. Fenugreek seeds-1 tsp
  7. Hing/Asafoetida-pinch
Instructions
  1. Clean and rinse tomatoes well.Chop into small cubes and add to the pan (Don't throw away the juice that is spilled from tomatoes while chopping ,do add them to pan)
  2. Heat pan with chopped tomatoes,tamarind paste and cook with lid on until tomatoes become mushy (10-15 mins)
  3. Open the lid and let all the water gets dried up. (10 mins)
  4. In a separate pan add fenugreek seeds ,hing,red chili and saute for a min.Once cooled grind to coarse powder.
  5. Add grinded powder,salt,sesame oil to the cooked tomatoes.
  6. Stir once in while to avoid burning at the bottom and cook for about 15 mins..
Notes
  1. Store Tomato Thokku in airtight container in refrigerator for a week.If you are going to consume this in a day then reduce the amount of oil but if you want to store for a week in refrigerator then add generous amount of oil as oil acts as preserving agent.
  2. The texture of Tomato Thokku should be thick like pickle consistency and not watery .For me it took 35 mins to prepare this thokku.

Serving Suggestions:

Serve Tomato Thokku as side dish for dosa, roti or mix it well with rice and sesame oil
