Sakkarai Pongal | Sweet Pongal

Sakkarai Pongal is prepared on Pongal festival which is called as Sweet Pongal and preparing at home with relatives surrounded stays memorable everytime. My mom used to wake us early by 4.00 a.m and asks us to take bath and be ready for pooja within 5 .oo a.m and meanwhile she prepares White Pongal ,Sweet Pongal and Veg kurma. Still thinking how she managed to prepare all the dishes quickly …..And when we go to my granny’s place she used to make Pongal in earthen pot/matki which tastes more than cooking in vessel…am missing those days now 🙁 .This is very rich dish as it is made of milk,jaggery and ghee :D.

Ingredients
  1. Basmati rice-1 cup
  2. Moong dal-1/4 cup
  3. Powdered jaggery -1.5 cup
  4. Elachi powder/Cardamom powder-pinch
  5. Water-2 cups
  6. Milk-2.5 cups
  7. Ghee-5 tbsp
  8. Cashew-5
Instructions
  1. Dry roast Moong dal in pan for about 3-4 mins.
  2. Add moong dal and basmati rice together and rinse it with water.
  3. Add moong dal,basmati rice,milk and water to cooker.Pressure cook for about 2 whistles.
  4. Switch off the stove. Once cooker gets cooled down ,release the pressure and open the lid of the cooker.Meanwhile add powdered jaggery in pan and 2 tbsp of water. Jaggery starts to melt and once it boils switch off the stove.Filter the jaggery liquid to remove the dirt from it.Then pour the filtered jaggery liquid to the rice.
  5. Now switch on stove in medium heat and start mixing so that rice gets blended with jaggery nicely.
  6. Add cashews ,elachi powder,ghee to the pongal. Stir for about a min and serve hot :)
Notes
  1. You can roast cashews, raisins in ghee and then add to pongal
  2. Adding more ghee makes pongal more yummy ;)

Note:

  • You can roast cashews, raisins in ghee and then add to pongal
  • Adding more ghee makes Sakkarai Pongal more yummy 😉
